Raleigh NC Catering: Holiday Dinner Parties Start with Mediterranean Appetizers!
Raleigh NC Catering | Green Olive & Almond Tapenade
- 4 cups unpitted green, Mediterranean-style olives
- 4 to 6 whole salt-packed anchovies (or 10 to 12 oil-cured anchovy fillets)
- 1/4 lb. (about 1 cup) slivered almonds, toasted
- 1 Tbs. minced garlic
- 1 Tbs. capers, drained
- 1 tsp. fresh lemon juice (optional)
- 1/2 cup extra-virgin olive oil
Pit the olives with a knife; set aside. If using salt-packed anchovies, wash the anchovies in several changes of water. Separate the fillets by running a knife or your finger along the backbone; remove any large bones. Put the pitted olives, anchovies, almonds, garlic, capers, lemon juice, and olive oil in a food processor; process until a coarse paste forms.
It makes a tangy topping for savory tarts and pizza and is delicious tossed with pasta along with a little olive oil and some fresh goat cheese. Brennan also tucks this tapenade under the skin of a chicken breast as a flavor booster.
Raleigh NC Catering | Greek Salad Skewers
One-quarter English cucumber
- Kosher salt and freshly ground black pepper
- 1/4 lb. feta cheese, cut into 16 small cubes
- 8 pitted Kalamata olives, halved
- 8 ripe grape or cherry tomatoes, halved
- 2 Tbs. extra-virgin olive oil
Cut four 1/2-inch-thick diagonal slices from the cucumber and then quarter each slice. Set the cucumber pieces on a large serving platter and season with 1/4 tsp. each salt and pepper. Top each with a piece of feta and then an olive half. Stab a toothpick through a tomato half and then thread through one of the cucumber stacks, pushing the toothpick down to secure it. Drizzle with the olive oil, sprinkle with some more black pepper, and serve.
- 1/2 cups whole grain quick-cooking bulgur (such as Bob’s Red Mill)
- 2 1/4 cups chopped green onions (about 14 onions)
- 2 cups chopped plum tomatoes (about 14 ounces)
- 3/4 cup chopped fresh dill
- 3/4 cup chopped fresh mint
- 1/2 cup olive oil
- 1 tablespoon plus 1/4 cup fresh lemon juice
- 1 teaspoon ground cumin
- 55 (or more) brined grape leaves from two 7- to 8-ounce jars, drained, stems cut off if needed
- 1/4 cup extra-virgin olive oil
- Fresh dill sprigs (for garnish)
- Fresh mint sprigs (for garnish)
Combine bulgur, green onions, tomatoes, chopped dill, chopped mint, 1/2 cup olive oil, 1 tablespoon lemon juice, cumin, 11/4 teaspoons salt, and 1 teaspoon freshly ground black pepper in large bowl; toss. Let soak at room temperature at least 30 minutes up to 1 hour.
Line bottom of large pot with 2 layers of grape leaves, covering bottom completely; set aside.
Open 1 grape leaf and lay flat, veined side down, on work surface (if leaf is small or broken, patch with 1 additional grape leaf). Place 1 tablespoon bulgur filling atop center of leaf. Fold stem end of leaf up over bulgur filling, then fold in sides of leaf over filling and roll up leaf tightly, enclosing filling completely. Place on baking sheet. Repeat with remaining grape leaves and bulgur filling.
Place filled grape leaves, seam side down, in bottom of grape-leaf-lined pot, fitting snugly together and layering filled leaves atop one another as needed. Pour enough water over filled grape leaves to cover generously (about 6 cups), then pour 1/4 cup lemon juice and 1/4 cup extra-virgin olive oil over. Place tart pan bottom atop leaves in pot; top with heavy heatproof dish or plate to weigh down. Bring liquid to simmer. Cover pot and reduce heat to very low; continue to simmer until bulgur filling is tender, 45 to 55 minutes.
Remove from heat and allow grape leaves to cool in liquid to room temperature. Gently remove filled grape leaves from liquid and place on platter.

Catering Raleigh NC: Stuffed Pork Chops and Mediterranean Green Beans Make a Delicious Holiday Dinner!
Welcome back! In our last post, Catering By Jasmin offered a delicious side dish, great for a small family Christmas Day or Christmas Eve gathering. Today, our catering company in Raleigh NC will continue our Mediterranean holiday dinner menu with another side dish and entrée.
These dishes are easier to prepare than our Mediterranean holiday dinner party recipes, as they don’t feed as many people.
Catering Raleigh NC | Mediterranean Green Beans:
1 1/2 to 2 pounds green beans, ends trimmed
1/4 cup olive oil
3 to 4 whole garlic cloves
3 to 4 anchovy fillets, chopped
1/2 cup green olives, pitted and halved
1/3 to 1/2 cup pimientos or roasted red pepper strips
1/2 teaspoon crushed red pepper
Blanch green beans in very salty water until crisp-tender. Drain and transfer to an ice bath to cool briefly.
In a large skillet heat olive oil until hot. Add the garlic cloves and the anchovy fillets and sauté briefly. Add green olives and pimientos and sauté for 2 to 3 minutes. Add the green beans, crushed red pepper and salt, to taste. Continue to sauté until green beans are hot and the flavors have come together, about 4 to 6 minutes. Serve hot.
Catering Raleigh NC | Mediterranean Stuffed Pork Chops:
- Four 1 1/2 to 2-inch-thick pork chops, bone-in
- 2 ounces crumbled feta cheese
- 1/2 cup chopped frozen spinach (thawed and well drained)
- 2 tablespoons chopped kalamata olives
- 2 tablespoons chopped sundried tomatoes
- Canola oil
- Salt and pepper
- 4 wooden skewers, soaked to prevent burning
Heat an outdoor grill or grill pan over medium heat. Preheat the oven to 400 degrees F.
Carefully make a slit into the side of each pork chop using a chef’s knife to create a pocket to stuff ingredients into. Mix together the feta, spinach, olives and sundried tomatoes in a medium bowl. Stuff each pork chop with the spinach mixture and rub each with 1/4 teaspoon salt and 1/4 teaspoon pepper. Secure each pork chop with a wooden skewer or toothpicks (remember to remove before serving).
Brush oil on the grill grate to prevent sticking. Grill the pork chops until nicely browned, 6 to 8 minutes, turning every few minutes to create grill marks. Transfer to a baking sheet and finish cooking in the oven until the pork reaches an internal temperature of 140 degrees F, 15 to 20 minutes.

Raleigh Catering: Mediterranean Recpies are Great for the Holidays!
Below, you’ll find a delicious side dish that is a Mediterranean favorite our Raleigh catering team loves to share! It is something to enjoy on a cold, winter day and goes great with traditional Mediterranean entrees like pork or lamb!
- 1 cup French lentils
- 2 cups water
- 2 tablespoons olive oil
- 2 tablespoons diced shallots
- 3 cups baby spinach leaves (about 3 ounces)
- 1 cup halved grape tomatoes (about 1/2 pint)
- 1/4 cup chopped fresh basil leaves
- 1/4 cup chopped fresh flat-leaf parsley
- 1/4 cup chopped fresh mint leaves
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Raleigh Catering | Directions
Place the lentils in a pot with the water and bring to a boil. Cover and simmer for 30-35 minutes, until the lentils are tender but still retain their shape. Drain any excess water from the lentils and set them aside.
Heat the olive oil in a large skillet over a medium-high heat. Add the shallots and cook until they are softened, about 3 minutes. Add the spinach and cook until just wilted, about 2 minutes. Add the tomatoes, lentils, basil, parsley, and mint to the pan and stir to combine. Cook until warmed through, about 1 minute. Stir in the lemon juice, salt and pepper and serve.

- 1 leg of lamb, bone in (about 6 to 7 1/2 pounds)
- 1/4 cup fresh lemon juice
- 8 cloves garlic, minced
- 3 tablespoons chopped fresh rosemary leaves
- 1 tablespoon salt
- 2 teaspoons coarsely ground black pepper
- 1 cup chopped fresh herbs (combination of rosemary, chives, and parsley)
- 2 cups diced onions
- 2 cups chicken stock
- 1 cup red wine

Preheat the oven to 400 degrees F.
Using your hands, rub the lamb all over with the lemon juice. Pat the garlic and rosemary evenly all over the surface of the meat. Season the meat with the salt and pepper and place the lamb in a roasting pan. Place the lamb in the oven and roast for 30 minutes. Reduce the oven temperature to 350 degrees F and continue to cook for about 1 hour, longer for medium-rare, or until a meat thermometer inserted into the center of the roast registers about 145 degrees F to 150 degrees F (be careful that the thermometer does not touch the bone.) Remove lamb from pan and allow to rest for 10 to 15 minutes before carving.
Position the roasting pan over your stove burners. Add mixed herbs and onions to pan, and stir to combine with pan drippings. Add chicken stock and wine to deglaze the pan, scraping the bottom with a wooden spoon to release any food. Reduce over high heat until sauce consistency. Strain before serving, if desired. Slice lamb and serve with sauce drizzled over the top.

Our Cary Catering Company Provides a Delicious Mediterranean Dessert Recipe Everyone Will Love During the Holidays!
- 2c fine semolina
- 1 c all purpose flour
- 1 c sugar
- 1c 2% milk
- 1 tsp salt
- 1 stick of butter
- 1 c water
- 1 c sugar
- 3-4 tsp honey
- On medium heat melt the butter into the milk until combined and warm
- Mix all of the dry ingredients together in a large mixing bowl.
- Pour warm milk and butter into dry ingredients and mix well. The mixture will not be as thin as cake batter – that is ok.
- Preheat the oven to 375F. Grease pan with butter and pour the batter into a baking dish – the cake will not rise, and should be a thickness of 1/4″ – 1/2″.
- Bake for 20-25 minutes until the top is browned.
To prepare syrup:
- In a saucepan combine water, sugar and honey.
- Allow to cook for 5-10 minutes until it has reduced to a syrup.
When cake the is removed from the oven, place it onto serving dish and cover it with the syrup. You could even poke holes in the cake with a fork or end of a wooden spoon to create a delicious syrupy cake, throughout! Top the final product with nuts, powdered sugar, coconut, or whipped cream.

- 1 bunch Italian parsley, leaves only
- 1 bunch mint, leaves only
- 1 bunch basil, leaves only
- 2 cups capers, rinsed
- 2 tablespoon salt-packed anchovy fillets, rinsed and drained
- 1 tablespoon Dijon mustard
- 1 teaspoon salt
- 1 teaspoon sugar
- 1/4 clove garlic
- 3/4 cup extra-virgin olive oil
In the bowl of a food processor, combine the herbs, capers, anchovies, mustard, salt, sugar and garlic and pulse to form a coarse puree. Slowly drizzle in the olive oil, pulsing after each addition to form a relatively smooth puree that still has some personality. Season with salt and pepper to taste. Can be kept refrigerated for up to one week.

In Greece, a special cookie is baked and served every Christmas. The cookies are spiced with honey and sesame seeds. Our Raleigh catering company offers a delicious yet simple cookie recipe!
Give your corporate holiday party in Raleigh a twist with Mediterranean catering company, Catering By Jasmin!
- 1 1/2 cups of olive oil
- 1/2 cup of sugar
- juice of 1 orange
- 4 tablespoons of brandy
- 1 teaspoon of baking soda
- 1 teaspoon of baking powder
- 1/2 cup of Vermouth
- 1 1/2 teaspoons of ground cinnamon
- 1 1/2 teaspoons of ground cloves
- 6 cups of all-purpose flour.
- 1 cup of white sesame seeds
- 1 tablespoon of honey
- 1/2 teaspoon of ground cinnamon
- 1/2 teaspoon of ground cloves
- 2 cups of honey
- 2 cups of sugar
- 2 cups of water
- 1 stick of cinnamon
- 1/2 cup of sesame seeds
- Dissolve the baking soda in the brandy.
- Combine the ground cinnamon and cloves in a bowl and mix well for the dough.
- Combine the ground cinnamon and cloves in a bowl and mix well for the filling.
- In a mixing bowl, beat together the oil and sugar for about 5 minutes. Add orange juice, brandy with baking soda, baking powder, combined ground cinnamon and cloves, and Vermouth. Continue beating and add two-thirds of the flour mixture, 1/2 cup at a time, beating on low speed until well blended. Change to dough hooks, or use hands when needed.
- Add remaining flour 1/2 cup at a time, kneading with hands at the end. Dough is ready when it no longer sticks to the hands, about 5 minutes of kneading (the dough will be oily).
- Combine all filling ingredients in a bowl.
- Use a handful of dough to make each cookie, forming into a log shape. Flatten it out, place a small teaspoonful of filling in the center and close the cookie, sealing the filling inside, in a long oval shape (see photo). Continue until all dough and filling is used.
- Preheat oven to 355°F (180°C).
- Place cookies well spaced on a lightly greased or nonstick cookie sheet (or on baking parchment paper). Bake at 355°F (180°C) for 30-35 minutes until nicely browned.
- Make the Syrup: The cooled cookies will be dipped in hot syrup, so don’t start the syrup until the cookies are cooled. Combine all syrup ingredients in wide pot (like a deep frying pan) and boil gently for about 15 minutes. Remove the stick of cinnamon. Leave the syrup on the stove over the lowest heat possible during dipping.
- Put in cookies (as many as will fit on the bottom in one layer) into the hot syrup and use a spatula if needed to hold them down for 30 seconds to 1 minute. Once the cookies have been soaked, remove them with a slotted spoon, letting excess syrup drip, place on a large serving plate in layers, sprinkling each layer with sesame seeds before adding another layer on top.

Preheat oven to 400°F.
Toss mushrooms, garlic, 1 tablespoon oil, 1/4 teaspoon pepper, 1 teaspoon sage, 1 teaspoon thyme and 1/2 teaspoon salt in a large bowl. Transfer to a roasting pan and roast in the oven for 5 minutes. Stir and continue roasting until the mushrooms are soft and fragrant, 5 to 10 minutes more. Set aside to cool.
To butterfly tenderloins, lay one tenderloin on a large cutting board. Holding the knife blade flat, parallel to the board, make a lengthwise cut through the center of the meat, stopping short of the opposite edge so that the flaps remain attached. Open up the flaps as you would open a book. Cover with plastic wrap. With a meat pounder, rolling pin or heavy pan, pound the meat to an even 1/4-inch thickness. Butterfly and pound the remaining tenderloin.
Divide the mushroom mixture between the tenderloins, spreading evenly and leaving a 1-inch border all around. Starting with a long side, roll up each tenderloin to enclose the filling, then tie the roasts at 2-inch intervals with kitchen string. Combine the remaining 2 teaspoons pepper, 1 teaspoon sage, 1 teaspoon thyme and 1 teaspoon salt in a small bowl. Rub the mixture all over the tenderloins.
Increase oven temperature to 450°F.
Heat the remaining 1 tablespoon oil in a large, heavy, ovenproof skillet over medium-high heat. Add the roasts, bending to fit if necessary, and cook, turning often, until the outsides are browned, 3 to 5 minutes total.
Transfer the pan to the oven and roast, checking often, until the internal temperature reaches 145°F, 15 to 20 minutes. Transfer the roasts to a cutting board, tent with foil and let rest for 5 minutes. Remove the string, cut the pork into 1-inch-thick slices and serve with Tomato Salsa Verde on the side.
Substitution Tip: Not all of us will have fresh porcinis at the ready, so you may substitute an equal amount of cremini, portobello or shiitake mushrooms. If you are using fresh shiitakes, remove and discard the stems first because they are too tough and fibrous to use.
